Chicken Enchilada or Chicken Taco (Like) Casserole

  • 3 pounds cooked chicken breast, cubed
  • 2 cans black olives, sliced
  • 1 large can green chilis, chopped
  • 5 ears of corn, cut from the cob
  • 1 can black beans, rinsed
  • 2 to 3 (10-ounce) jars of salsa, to taste
  • 2 cups cheddar cheese
  • 1 bag blue corn corn tortilla chips, crushed
  1. Combine all ingredients in a dutch oven. 
  2. Mix thoroughly. 
  3. Bake uncovered at 350 F for 45 minutes.

      I'm sure it can be made in any baking dish. I'm fond of enameled cast iron since it's so darn easy to clean.
